Golden Pumpkin Spice Energy Bars

If you haven’t heard…it’s pumpkin spice season! In order to pay tribute and show my respect to the PSS, I wanted to get creative and come up with something that would not make me feel guilty for indulging in all the pumpkin spice glory. I decided to put a little spin on a dessert my sister and I made last weekend to make it more of a protein dense, healthy fat-filled treat!

 

Golden Pumpkin Spice Energy Bars

Here is what you’ll need

Crust
1 cup pitted Medjool dates
1 cup roasted cashews
¼ cup roasted pumpkin seeds
¼ cup unsweetened coconut shreds
1.5 tsp unrefined coconut oil
½ tsp vanilla extract
¼ tsp Himalayan pink salt
1 tsp cinnamon
1/4 tsp ginger
Good size pinch of each allspice, clove, nutmeg
1 tsp Stay Golden - Herbal Powder

Filling
1 1/4 cup pumpkin puree
1/4 cup coconut oil, melted
1/3 cup nut butter
1/4 cup honey
1-2 scoops Collagen powder
2 tbsp potato starch
1 tsp cinnamon
1/2 tsp Himalayan pink salt
1/4 tsp ginger
Pinch of each allspice, clove, nutmeg
1 tsp Stay Golden - Herbal Powder 
1 tsp pure vanilla extract

Here is what you’ll do

  1. For the crust, place all ingredients in a blender and blend until well incorporated. Set aside half a cup of this mix, then pour the rest out into a 9x9 glass baking dish, lightly coated with coconut oil and press down firmly and evenly distributing the crust on the bottom of the dish. Set aside.

  2. For filling, place all ingredients in bowl and mix well with a large spoon until no lumps or clumps remain. Once ready, pour mixture over crust and spread evenly. Lightly sprinkle the saved half cup of crust mix over the pumpkin mixture. Freeze for 2 hours, serve cold.
    *These will store in the freezer for about 4 months in an airtight container, but I’m sure they’ll be gone by then ;)
