Happy National Waffle Day to all the waffle lovers out there!
I thought this would be a great opportunity to get creative in the kitchen with a classic breakfast dish - THE BELGIAN WAFFLE! I wanted to make the perfect, light and crispy waffle that incorporated some really healthy ingredients to start the day off with a protein boost and some good ole caffeine.
And, might I say, I think I did pretty well...
Here's What You'll Need
3/4 cup finely ground almond flour
1/4 cup potato starch
2 teaspoons Matcha-Cha Herbal Powder
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup buttermilk (I used 3/4 cup almond milk with 2 teaspoons apple cider vinegar)
6 tablespoons Blood Orange Olive Oil
1/4 cup almond milk (or milk of choice)
1 large egg, separated
1 tablespoon coconut sugar
1/2 teaspoon pure vanilla extract
Pure maple syrup or raw honey, for serving
Here's What You'll Do
Preheat waffle iron. In a medium bowl, combine the almond flour, potato starch, Matcha-Cha Herbal Powder, salt, baking powder and baking soda. In a glass measuring cup, blend the buttermilk, Blood Orange Olive Oil and almond milk, once blended, beat in the egg yolk.
In a different medium bowl, beat the egg white to soft peaks, using a whisk works best. Add the sugar and beat until firm and glossy, then proceed to beat in the vanilla until all is incorporated.
Pour the liquid ingredients from the glass measuring cup into the dry ingredients and whisk until just blended. Very gently fold in the beaten egg white until just incorporated, using a rubber spatula works well for this step.
Lightly oil the waffle iron. Pour about 1 1/2 cups of the waffle batter into the preheated waffle iron. Bake for 5-8 minutes, or until browned and crisp. Repeat this step until the batter is gone. To keep waffles warm, place in oven at about 200°F on a wire screen.
Enjoy immediately with a drizzle of maple syrup or raw honey.

I hope you all enjoy these waffles as much as my dad and I did! We decided they taste a bit like fruity pebbles and heaven all mixed into one delicious and healthy grid-like structure.
