Am I the only one who strolls down the aisles of the grocery store looking for a delicious yet simple and healthy granola without all the bad stuff (aka preservatives, hidden sugars, synthetic sweeteners, unhealthy oils)? It has been such a challenge that I have given up...
Thankfully, I have a very foodie friend group and one of my closest friends ended up having the perfect recipe! It is jam packed with healthy nuts, grains and seeds, oils, and there is just enough sweet to satisfy any craving and get this, the sweet is full of fiber (dates) and immune-boosting (raw, local honey) properties.
This granola is a healthy way to start the day or great for a mid-day snack attack. Enjoy it with yogurt, milk, or sprinkled over your morning smoothie. Can you say YUM?
Check out this awesome recipe my bestie shared with me. She tweaked her normal granola recipe and added in our delicious adaptogenic mushroom blend, the Loco Hot Cocoa.
Here is what you'll need
3 cups old-fashioned rolled oats
1 cup hulled raw pumpkin seeds
1 cup hulled raw sunflower seeds
1 cup raw almonds, coarsely chopped
1 cup unsweetened coconut chips (I used flakes but chips work best!)
1 1/4 cup raw pecans, left whole or coarsely chopped
1/2 cup raw, local honey
1/2 cup extra-virgin olive oil
4 tbsp Loco Hot Cocoa
6 medjool dates, pitted and chopped
1/4 cup cacao nibs
Here is what you'll do
Preheat the oven to 300° F.
In a large bowl, hand mix oats, pumpkin seeds, sunflower seeds, raw almonds, coconut chips, and pecans. Once fully incorporated, drizzle the honey and extra virgin olive oil over top, mix again.
Now it is time to add the Loco Hot Cocoa! One tablespoon at a time, sprinkle the Loco Hot Cocoa over top of the granola, thoroughly mixing between. Continue mixing until everything is saturated in the cocoa blend.
Spread granola out evenly on a rimmed baking sheet, add salt to taste and place in the oven. Bake for ten minutes, stir everything up then bake for another 10 minutes.
This is halfway through - at this point, add the dates and cacao nibs and stir again. Leave in oven for 10 minutes, then stir once more, place back in over for the last 10 minutes. The granola should be in the oven for about 40 minutes total, or until the ingredients begin to brown or crisp up slightly.
Remove granola from oven, taste is carefully and add more salt if desired. Let it cool completely before serving or storing in an airtight container. Stores well up to 1 month.
